Usage Note
Schmand is a thick, soured cream product richer and tangier than Sauerrahm, used in baking, casseroles, and sauces. Unlike crème fraîche it does not curdle easily when heated, making it useful for hot sauces. It is labelled saure Sahne in some regions.
